Delicious Orange Nut Cake

1 medium unpeeled orange, washed, coarsely chopped

1 cup raisins

1/4 cup hot water

1 1/2 cup flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cup granulated sugar or 2 cups of brown sugar

1 stick butter, softened

2 eggs room temperature

3/4 cup buttermilk

3/4 cup finely chopped pecans or walnuts

First you will need to heat your oven to 350 degrees.

Next combine the orange and raisins in a food processor; pulse this until the mixture is finely ground. Now pour hot water over this mixture and set aside.

Take your flour, baking soda and salt and put in large bowl and set aside.

Combine the sugar and butter in a large bowl now beat with an electric mixer until light and fluffy. Next add your eggs, one at a time, mixing well after each addition. Now slowly add the flour mixture and buttermilk to the sugar-butter mixture, beating until smooth with each addition. Last stir in your reserved orange-raisin mixture and the nuts. Pour batter into a greased and floured 12-cup Bundt pan.

Bake for about 40-50 minutes. Test with a toothpick to make sure the cake is baked all the way through

Let cake cool in pan 15 minutes. Next invert it onto a wire rack and cool completely and then dust with confectioner sugar
