2 tablespoons Instant Coffee
1/4 cup boiling water
32 Vanilla Wafers, divided
1 -8 ounce Cream Cheese Spread
1/4 cup powdered sugar
1 - 8 ounce Whipped Topping, thawed
1 cup fresh raspberries
1 teaspoon unsweetened cocoa powder
First stir the instant coffee granules into boiling water until they dissolve. Next cover a bottom of 8-inch square dish with 16 of vanilla wafers.
Drizzle evenly with 1 Tbsp. of the coffee mixture. For a really nice coffee flavortry use hazelnut flavor coffee.
Now add 2 tablespoons of the remaining coffee mixture gradually to the cream cheese spread in a medium bowl, beating with wire whisk until well blended. Next add powdered sugar; mix well. Gently stir in whipped topping.
Spoon half of the cream cheese mixture over the vanilla wafers in the dish. Now cover with the remaining 16 wafers. Drizzle with the remaining coffee mixture; top with the remaining cream cheese mixture.
Refrigerate for 2 hours overnight. Top with the raspberries just before serving and sprinkle with cocoa. This is great for any party.
